Mommy’s Time Out

 

Mommy’s Time Out Wine is a great gift for pampering your mother on Mother’s Day. At a price point of $8-$12, it is affordable and delicious. There are two types made at a small vineyard in Italy: Pinot Grigio and Rosso Primitivo, both are fresh and fruity with a well balanced acidity.
Pinot Grigio:
The bouquet has notes of pear, citrus and almonds. The first impression upon tasting it is crisp and refreshing, with the Garganega adding body to the midpalate and length on the finish.

Rosso Primitivo:
Nose of raisined fruit, cherries and blackberries with sweet spice and dry herbs. Full and generous in the mouth with jammy, raspberry fruit flavors and lots of spice. Fresh with well-balanced acidity.

Cooking dinner for the special Mom in your life?
Try this dessert that is sure to be a winner!


Prosecco Peach Shortcake with Raspberry Mascarpone and Almonds
 

Ingredients: Procedure:  
•1 1/2 Pounds Peaches, peeled and sliced 1/2" thick
•1/4 Cup Sugar
•3 Cups Prosecco
•1 1/2 Cups Flour
•2 Tablespoons Sugar
•2 Teaspoons Baking Powder
•3 Ounces Unsalted Butter, chilled, cut into 1" pieces

•3/4 Cup Cream, chilled
•1/8 Teaspoon Salt
•1 Pint Raspberries
•6 Ounces Mascarpone
•1/4 Cup Cream
•3 Tablespoons Sugar
•1/4 Cup Sliced Almonds, toasted
•Powdered Sugar, optional
Preparation:


 

For the shortcake:
Preheat oven to 375 degrees.
In a large bowl, combine the flour, 2 Tbls sugar, baking powder, and salt. Cut the cold butter into the flour mixture with a pastry blender or your fingers until the butter is pea size. Quickly work in the 3/4 cup of cold cream until the mixture just holds together. Don't over mix or your dough will be tough.
Roll out the dough with a rolling pin until it's about an inch thick. Use a 3-inch cookie cutter to cut out the dough. Don't twist the cookie cutter. Press straight down, then remove the circle of dough. This will help the shortcake to rise higher. Put the cut dough on a parchment lined cookie sheet and brush the tops with a little cream. Bake for about 20 minutes until golden brown.

For the peaches:
In a bowl, combine the peaches with Prosecco and 1/4 cup of sugar. Refrigerate until needed.

For the raspberry cream:
In the bowl of a stand mixer, whip together the mascarpone, raspberries, 3 Tbls sugar, and 1/4 cup of cream.
 

Plate:
Split the shortcake in two with a serrated knife. Place 3 or 4 slices of the peach on top of the shortcake followed by a scoop of
whipped mascarpone. Sprinkle some toasted almonds on top of the mascarpone and put the top of the shortcake over the whole thing
followed by another scoop of mascarpone, some powdered sugar and a few toasted almonds.
